Alpha cellulose fibers detoxify or “clean” the must through the adsorption of
medium chain length fatty acids (C6-CB-C10) produced during fermentation.

• Provides a support matrix for yeast, especially in highly clarified juice such as juice processed
by centrifuge or where mold/rot conditions existed on incoming fruit.
• Contains many of the necessary nutritional needs of the yeast.
