Potassium Sorbate
Highly effective wine stabilizer optimized for maximum, fast-acting reduction of polyphenols, such
as leucoanthocyanadins and catechins that may cause “pinking” and “browning” through oxidative
polymerization.
Stops fermentation and prevents re-fermentation in the bottle when added before bottling.
• 100% PVPP.
•• Also known as Potassium-2 and 4-hexadienoate.

Potassium Benzoate
Propylene Glycol – Inhibited
Helps clarify wine after fining; generally used in sweet and sparkling wines but may also be added to table
wines that exhibit difficulty maintaining clarity.
96% propylene glycol inhibited industrial coolant and heat transfer agent that protects brass, copper, solder,
steel, cast iron aluminum and other metals commonly found in industrial cooling and heating systems.
•• White crystal or granular.
•• Free of suspended solids.
•• Soluble in water and wine.
•• Colorless and odorless.
•• Can be used as an alternative to Sodium Benzoate.
•• Other names: Propane-1,2-diol; 1,2-Propanediol.
Application: Added at any stage of the winemaking process; typically used when active fermentation has
ended and wine is racked for final time after settling.

Potassium Carbonate
Used for deacidification of juice or wine for a more efficient fermentation and improved acid balance in the
resultant wine.
•• Raises pH and lowers TA of the juice prior to fermentation.
•• Treating the juice has the least detrimental effect on the sensory characteristics of the wine.
•• Also known as Potash and Pearl Ash.
Application: Can be added at any stage of the winemaking process but most commonly just prior to fermentation.

An alternative to Sodium Chloride to be used in water softening units.

Potassium Metabisulfite
Prevents oxidation and/or spoilage in must or wine and can be used in either powder or liquid form to sprinkle
over grapes prior to crushing.
•• Inhibits harmful bacteria in water through release of sulfur dioxide.
•• Also used as an antiseptic to sanitize tanks, lines, and pipes.
•• Note: Its strength is about 17% greater than sodium metabisulfite and it should be mixed accordingly.
Application: Add at any stage of the winemaking process.
