We start with a meeting prior to the service date to understand your goals. On service day,
we show up with the equipment loaded onto our truck and hook your hoses directly to our
equipment so that flow runs through the equipment and directly into your receiving tank.
Using our mobile analysis, we will customize each service to your needs so that your wines
achieve their full potential. Like you, we are wine people who understand the delicacy of the
craft, and we will prepare your wine for bottling as if it were our own.
Lees Filtration
Allows for the heavy filtration of juice, lees, finished wine, and residual bottoms without filter aides
such as diatomaceous earth. Recoups leftover lees that would otherwise be discarded, increasing
overall production volume.
• Equipment: TMCI Padovan Taylo Vacuum Filter and TMCI Padovan Dynamos Cross-Flow Filter Systems
Thermovinification/Flash Détente
Provides rapid extraction of color and polyphenols to intensify wine color while avoiding the
extraction of unwanted tannic components. Also reduces pyrazines to enhance the natural fruit
characters and may help reduce the presence of smoke-related compounds.
• Equipment: TMCI Padovan Red Hunter Thermovinification Unit
Dissolved Gas Management
Protects wine from oxidizing by measuring the level of dissolved oxygen and providing inline deoxygenation by sparging with nitrogen. Adjusts CO2 levels in still and sparkling wine.
• Equipment: Parsec OxyLevel 2200 and Parsec EVO 1000
Cross-Flow Filtration
Removes unwanted yeast and bacteria from wine while keeping the characteristics of the wine
itself intact, without the use of diatomaceous earth. Operates at low pressures to be gentle on
wine while stabilizing and preparing it for bottling, with extremely low O2 pickup.
• Equipment: TMCI Padovan Smart 80 (flow rate 500-1600) and TMCI Padovan Nitor 120 (flow rate 600-2400)
pH Adjustment & Tartaric Stabilization
Lowers pH and reduces tartrates in clarified juice or finished wines using ion exchange, drastically
reducing acid additions needed to achieve desired pH levels while leaving the color and integrity
of the wine intact. Small volumes can be treated and then blended into total volume.
